RisottoRisotto is a class of Italian dishes of rice cooked in broth to a creamy consistency. the broth may be meat-, fish-, or vegetable-based; many kinds include parmesan cheese, butter, and onion. It is one of the most common ways of cooking rice in Italy. Risotto is normally a primo (first course), served on its own before the main course, but risotto alla milanese, is often served together with ossobuco alla milanese. Ossobuco Alla MilaneseIn our opinion, a really good osso buco has that tangy, rich depth of flavor thing going, that only can be obtained by layering flavors. to us, layering is gourmet cooking personified. after many, many efforts, we have constructed a recipe comparable to that found in fine Italian restaurants. that doesn’t mean we are necessarily finished with New Italian recipe’s osso buco. Llke most of the “traditional” Italian recipes featured here, ours will be forever “evolving”. that’s what gourmet cooking is all about for us. from all we’ve read, this is a northern Italian dish. It means “bone with a hole” or “hollowed bone”. this refers to the veal shank bone with a large and tasty marrow filling. at the end, this dish is often garnished with a gremolata (or gremolada), consisting of a mixture of Italian parsley, garlic and grated lemon peel. We like to add a or so of fresh lemon juice and only a “bit” of the grated peel, but that is just our personal taste. osso buco’s traditional partner is a milanese style risotto. we sometimes serve it with garlic mashed potatoes, though. the osso buco gravy slathered over mashed potatoes? yum, yum!
GnocchiSmall dumplings gnocchi are one of the oldest preparations in the history of food, recorded as far back as cookbooks of the thirteenth century. In a fragment of a book of the 1300s there is a recipe for gnocchi written in the Tuscan dialectal language . In spite of the long description, gnocchi are very easy to prepare. gnocchi can be dressed with many sauces, but are especially good with pesto, amatriciana sauce, ragu', four cheeses, butter and fresh tomato sauce, or very simply butter and sage as in our presentation. the taste of the butter - sage dressing is very delicate and will enhance the taste of the gnocchi. gnocchi are also one very refined dishes, worthy of the most sophisticated menus. try our gnocchi and gorgonzola, gnocchi four chesee or just tomato and basil...this simple food will surprise you !!
